Caramelized Red Onion and Goats Cheese Panini
Taking a modern spin on the cheese and onion sandwich, this caramelized red onion and goats cheese panini is a much more exciting version!
By combining the sweetness of the caramelized red onions with the slightly sour goats cheese, it works well and makes for a tasty, light lunch. You could also try cutting into quarters and serving as a starter or party nibbles.
However you’d like to serve it, you've got the added bonus of having health boosting omega 3 and antioxidant rich walnuts to give it a moreish texture while the Manuka honey
drizzle tops off the perfectly balanced combination of sweet and sour. With serving the honey as last addition you won't lose its goodness too!
Serve with a rocket salad and cherry plum tomatoes for a more filling meal, this dish is best served warm.
Handful of roughly chopped walnuts
1 tablespoon butter
2 medium-sizes red onions thinly sliced
1 teaspoon sugar
2 large garlic cloves, crushed
150g goats cheese
pinch of salt & pepper to season
2 x panini's
Melt the butter in a pan over medium-high heat. Stir in the onion and sugar, cook over a medium heat for 15 to 20 minutes or until onions are caramel colored. Keep turning the mixture to avoid sticking to the pan.
Add the crushed garlic, and cook for 2 more minutes.
Remove from the heat and stand for 10 minutes.
Blend the onion mixture with the goats cheese in a food processor or hand blender, seasoning with a pinch of salt and pepper until everything is well blended and smooth.
Slice the paninis in half (along the shorter side so it opens up like a sandwich)
Spread mixture evenly onto cut sides of each slice.
Place on a baking sheet and bake at 150° for 15 minutes or until thoroughly heated and edges are lightly browned.
Drizzle evenly with Manuka honey, and sprinkle with roasted walnuts and rocket leaves to serve.
