We love meals where you can throw everything on to a single tray and let the oven do the rest of the work – and this chickpea salad recipe is one of them! The honey roasted broccoli brings out the flavours in the rest of the dish, making for a perfect side with your favourite protein or a wholesome light lunch on its own to supercharge your day. Think minimum effort, maximum flavour – what could be better?
Honey Roasted Broccoli & Chickpea Salad

- 1 Head broccoli
- 1 tin Chickpeas
- 3-4 Button mushrooms
- 2 tps Extra virgin olive oil
- 1 tps Salt
- 1 tps Pepper
- 1 tps Garlic powder
- 1 tps Paprika
- 1 tps Cumin
- 1 tps COMVITA 83+ 250G MANUKA HONEY
Coat the broccoli, mushrooms and chickpeas in the Manuka Honey, oil, salt, pepper, and spices in a bowl.
Transfer onto a baking tray and bake in the oven at 200°C for 20-25 mins.
Place the broccoli & mushrooms in a bowl and top with the chickpeas.
