Ingredients (to create 12 truffles approx.):

  • 1 tbsp of coconut oil
  • 1/4 cup plus an extra 2 tablespoons of shredded unsweetened coconut
  • 1/8 cup of chia seeds
  • 1 tbsp of UMF™ Manuka honey to taste

  • Place the dates in a large bowl or mixer and blend until smooth.
  • Add in the coconut oil and continue to mix. Gradually add the ground almonds and chia seeds until you have a thick paste.
  • Add the raw cacao nibs or powder and 2 tablespoons of the shredded coconut.
  • Next, add the Manuka honey and ensure that everything is mixed thoroughly.
  • Use your hands to roll the mixture into small balls. Roll each one in the remaining shredded coconut until covered.
  • Repeat the process until all the mixture has been used and leave to chill in the freezer until ready for to serve.
