Manuka Honey Chocolate Truffles Recipe

The most common ways to use MANUKA HONEY are as a spread on your morning toast or as a natural sweetener in a hot or cold drink. But like any true superfood, Manuka can be used to create a multitude of different, healthy recipes.

To underline its role as a SUPERFOOD, we’re going to show you how to create a tray of fabulous chocolate truffles with Manuka honey, ideal as a treat for all the family at any time of year or as a homemade gift.

 

Servings

Approx. 12 truffles

Ingredients

  • 1 cup of ground almonds
  • 12 dates, pitted
  • 1/4 cup of raw cacao nibs or powder
  • 1 tbsp of coconut oil
  • 1/4 cup plus an extra 2 tablespoons of shredded unsweetened coconut
  • 1/8 cup of chia seeds
  • 1 tbsp of MANUKA HONEY MGO263+ to taste

Method

  1. Place the dates in a large bowl or mixer and blend until smooth.
  2. Add in the coconut oil and continue to mix. Gradually add the ground almonds and chia seeds until you have a thick paste.
  3. Add the raw cacao nibs or powder and 2 tablespoons of the shredded coconut.
  4. Next, add the Manuka honey and ensure that everything is mixed thoroughly.
  5. Use your hands to roll the mixture into small balls. Roll each one in the remaining shredded coconut until covered.
  6. Repeat the process until all the mixture has been used and leave to chill in the freezer until ready for to serve.
