Manuka Souffle-Pancake Recipe
Get ready to make some fabulous pancakes for Pancake Day! Try our Manuka soufflé-pancake! Light, fluffy and packed with UMF Manuka goodness, this recipe is for the best Shrove Tuesday ever!
Ingredients (serves 4 pancakes)
50g of plain flour
¾ tsp of baking powder
¼ cup of milk
1 tsp of UMF5+ Manuka honey
2-4 tbsp of UMF5+ Manuka honey (to drizzle on top)
Whisk one egg yolk, milk, flour and baking powder together. Once smooth, add Manuka honey and stir in thoroughly until no lumps remain.
Whisk two egg whites until they form firm peaks. Then gently fold in egg whites into the batter.
Grease two ring moulds and set them in a pan over the lowest heat. Pour batter into the ring moulds, fill to 2/3. Cover the pan and cook for about 5 minutes each side until bottom is lightly browned.
Decorate with fruits, warm up Manuka honey and drizzle on top to serve.
