Summer Skewer Recipe
Here at Comvita there isn’t much more we enjoy than getting creative with our lovely bee products, particularly cooking and preparing delicious food with our honey.
Why not give the below summer skewer recipe a go, it is the perfect opportunity to all get involved in the prep and enjoy together with a picnic outdoors (weather permitting!) A picnic is especially rewarding after a bike ride or long walk.
For the marinade:
- 2 tbsp balsamic vinegar
- 2 tbsp Worcestershire sauce
- 2 tsp onion powder
- salt to taste
- 2 tbsp table honey
- 1 tsp pepper (or to taste)
- 2 garlic cloves, crushed
- 1 tsp ginger, grated
- 1 tbsp coconut oil
Diced organic chicken breasts approx. 1-2inch cubes
sesame seeds for sprinkling on top
extra honey (optional)
You will need bamboo skewers.
Blitz together all of the ingredients for the marinade and thoroughly coat your chicken with the mixture. Place the chicken onto the bamboo skewers (recommended that you soak these in water first to prevent burning). You can cook these in a medium heat frying pan for 5 minutes or until caramel brown. If you’re cooking these on a BBQ make sure that the outside doesn’t colour too quickly, avoid this and sticking by placing on foil first. Sprinkle the finished creation with an extra drizzle of honey and a few sesame seeds.
The great thing about these skewers is that they are fun and messy to prepare, they travel well and are a great snack-y picnic food when hot or cold. Just make sure that the little hands are washed after touching the chicken.
This recipe can also be made with pork, fish, or vegan substitutes and with added veg to the skewer!
