Sweet Summer Recipes

We hope that you will enjoy these three quick and tasty recipes. As the weather heats up these food and drinks recipes are a refreshing and an easy way to incorporate your daily dose of Apple Cider Vinegar and some of the sweet stuff; floral New Zealand honey.

Tasty Tonic
Makes: 4-8 cups

2 glasses of warm water
4 tbsp. Apple Cider Vinegar with Manuka honey (shake before use to include the mother)
4 tbsp. lemon juice
1 tsp. ground cinnamon
1 pinch cayenne pepper (optional)
3 tbsp. Clover honey

Dissolve cinnamon, cayenne, honey, and lemon in warm water (stir well). Add the Apple Cider Vinegar to the mixture. Consume right away for a warm tea, or cool and store in airtight jar and pour over ice for a refreshing beverage ready at any time. The tonic is quite concentrated, so drink small cups or mix in water if it is too strong for your liking. Store in a fridge in a sealed container and use within a week.
Honey Garlic Salmon Recipe

Serves 3

3 small Salmon fillets
Black Pepper
Pinch of cayenne pepper
2 tablespoons Clover honey
1 tablespoon warm water
1 tablespoon oil
3 cloves garlic, minced
1/2 lemon, sliced into wedges
Season the surface of the salmon with the dry ingredients; salt, black pepper and cayenne pepper and put to one side. Mix the honey, water, Apple Cider Vinegar and a pinch of salt together. Stir to combine well. Heat up a frying pan with the oil and fry the salmon on each side for 3 minutes, until half done. Add the garlic into the pan until slightly browned. Add the honey mixture and lemon wedges into the skillet, reduce the sauce until it’s sticky, approximately another 5 minutes on a medium heat. This salmon recipe tastes great served with brown rice or broccoli and sesame seeds.

Sunshine Basil Lemonade

Serves 2

100ml fresh lemon juice
200ml water
3 tablespoons Clover Honey
2 sprigs of fresh basil
1 small sprig of basil for decoration
Ice for glass
Combine all of the ingredients in a blender and pulse until the basil is completely broken down and mixed with the other ingredients. Alternatively, you could just shake the ingredients together with a large ice cube and allow the flavours to infuse in the fridge for an hour or so, then strain before serving. To serve, pour over ice and top with some basil.
