Vegetable and Noodle Surprise
An easy and healthy recipe, perfect for those cold winter evenings.
2 cups tomatoes (cut into quarters)
1 cup eschalots (chopped)
Half cup slivered almonds
1 cup zucchini (diced)
1 cup cauliflower (flowerets)
2 cups cooked noodles
One third cup Comvita Olive Leaf Extract
In a heavy pan, sauté the tomatoes, almonds and cauliflower. Stir well. Turn down heat and add eschalots, zucchini and Olive Leaf Extract and mix.
Finally, gently fold in the cooked noodles.
Serve with hot crusty wholegrain bread rolls.
