Healthy Ginger Honey Crisps Recipe

These ginger crisps are everything you want from a treat – perfectly sweet, crispy on the outside and chewy on the inside. The fact that they make for a deliciously healthy snack is a bonus – plus, they’re gluten free and vegan! With these honey crisps, you can have your cookie and eat it. Whip up a batch and enjoy with your favourite herbal tea… Or if you’re feeling old school, a glass of cold milk!

Ingredients

  • 4 tbps Coconut oil
  • 2 tbps Flour
  • 2 tbps Milk
  • 100 Grams Rolled oats
  • 1 tsp Cinnamon
  • 1/2 tsp Vanilla extract
  • 1 Pinch of salt
  • 1 tsp Ground ginger
  • 4 tbsp COMVITA 83+ 250G MANUKA HONEY

Method

  1. Place all ingredients into a mixing bowl and stir. Beat mixture until there is a firm doughy texture.
  2. Split dough into 12 balls and place on a parchment paper covered baking tray.
  3. Flatten each ball with a spoon as thinly as possible.
  4. Bake at 180 for 15-18 minutes or until golden
